Fruit salad is a brunch staple, so why not up your game a bit this year for your Mother’s Day brunch with this beautiful Citrus Kiwi Fruit Salad with a Honey Lime Vinaigrette?  Heaven’s knows mom deserves it!

The Flavours of the fruit and zippy vinaigrette really stand out in this Citrus Kiwi Fruit Salad.  Citrus is so versatile and drop dead gorgeous – it comes in so many pretty Colours!  We used blood oranges, pink grapefruit, navel oranges and kiwi but you can adjust these to match your Favourite citrus fruits.  There really aren’t any rules here

A Refreshing Brunch Delight

 

Citrus fruits are rich in vitamin C along with potassium, fibre and folic acid along with a handful of other B vitamins. Interestingly, kiwi fruit has MORE vitamin C in it than oranges do… and they add such a pretty element to the salad!

This showy Citrus Kiwi Fruit Salad is dressed up with a zesty Honey Lime Vinaigrette and is the perfect way to show your brunch table a bit of love!

Ingredients

SALAD

  • 3 oranges (peel cut off)
  • 2 pink grapefruits (peel cut off)
  • 2 blood oranges (peel cut off)
  • 2 kiwis (peel removed)
  • mint leaves for garnish (optional)

DRESSING

    • 1/4 cup olive oil
    • 2 tablespoon lime juice (freshly squeezed)
    • 1 tablespoon white wine vinegar
    • 1 tablespoon honey
    • pinch of salt

Instructions:

Prepare Fruit:

Slice the oranges, pink grapefruits, blood oranges, and kiwis horizontally into about 1/4 inch thick slices. This thickness showcases the beautiful patterns of the fruit. Remove the peels from the oranges, grapefruits, and blood oranges, and the skin from the kiwis.

Arrange Fruit:

Arrange the sliced citrus and kiwi on a serving platter in an attractive pattern. You can layer them or arrange them in a fan shape for visual appeal.

Make Dressing:

In a small container, mix together the olive oil, freshly squeezed lime juice, white wine vinegar, honey, and a pinch of salt. Whisk or shake well to ensure all the ingredients are thoroughly combined.

Drizzle Dressing:

Pour the prepared honey lime vinaigrette over the arranged citrus and kiwi slices. Ensure the dressing is evenly distributed over the fruit.
