This Prosciutto Melon Salad is so light and refreshing! Stunning to look at and even better to eat, the pairing of three varieties of melon with cured prosciutto and creamy bocconcini on a bed of crisp arugula, makes for a great sweet and salty combo.

Hot days are here, and nothing beats a refreshing meal that skips sweating it out in front of the stove. That means…. make way for summer salads! Simple to throw together (which is great during busy summer days full of activities), healthy and perfect for  enjoying at home or even on the go (hello Mason jar salads).

If you haven’t tried the combination of prosciutto with melons like cantaloupe, honeydew or watermelon, you are in for a treat! I used a melon baller to get perfect shaped melons that matched my bocconcini but by all means, chop, slice and dice your fruit in any shape you wish!  It doesn’t have to be fancy.

Summer Salad Recipes

One thing is for certain…I love a good summer salad! Any chance I get to skip cooking on a busy summer day I am going to take (more pool time!). Whipping up an easy and healthy salad for lunch or dinner is the best, and I have my fair share of favourites. This Avocado Shrimp Citrus Salad or Grilled Peach & Corn Salad are two that stand out. I also love taking this Creamy Avocado Pasta Salad with me in a cooler to the beach or camping!

What To Do With Leftover Watermelon

Since this recipe calls for half a watermelon, here are some ideas on how to use up the rest! I mean, it goes without saying that cut into slices is a fine way to eat it up as well!

Prosciutto Melon Salad

This compltely refreshing salad is like a work of art and is fabulous for entertaining! Add spiced pecans for some extra crunch (the ones in our cookbook Fraich Food Full Hearts are epic if you have the book!).
