CAULIFLOWER STEAK

Ingredients:

– 2 Cauliflower slices, each about 2 cm thick

– Coconut oil or olive oil

– 2 tbsp butter

– Pomegranate seeds

– Charmoula (a North African marinade)

For the Tahini Sauce:

– 1 tsp tahini

– 1 tsp olive oil

– 1 tsp maple syrup

– 1 tsp lemon juice

Instructions:

  1. Preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit).

 

  1. Season the cauliflower slices with a pinch of salt. Brush both sides of the slices with olive oil.

 

  1. Heat a cast iron or heavy-bottomed pan over medium heat. Place the oiled cauliflower slices in the pan. Fry for approximately 3 minutes on each side until they turn golden brown. You can also use coconut oil for frying.

 

  1. While the cauliflower is frying, prepare the charmoula marinade. In a bowl, combine minced garlic, finely chopped onion, honey, vegetable stock, salt, pepper, and zaatar.

 

  1. Once the cauliflower slices are nicely browned, transfer them to an oven-safe dish or baking tray. If your pan is oven-safe, you can leave the cauliflower in the pan.

 

  1. Pour the charmoula mixture over the cauliflower slices. Make sure they are evenly coated. If using an oven-safe pan, you can keep them in the same pan; otherwise, transfer them to a casserole dish or baking tray. Place the dish or tray in the preheated oven.

 

  1. Roast the cauliflower in the oven for about 15 minutes. During this time, turn the slices over 1-2 times to ensure even cooking. The cauliflower should become tender and slightly caramelized.

 

  1. While the cauliflower is roasting, prepare the tahini sauce. In a bowl, whisk together tahini, olive oil, maple syrup, and lemon juice until smooth. Adjust the consistency by adding a bit of water if needed.

 

  1. Once the cauliflower is done roasting, remove it from the oven. Plate the cauliflower slices and drizzle the tahini sauce over them.

 

  1. Sprinkle the roasted cauliflower with fresh pomegranate seeds for a burst of color, flavor, and a touch of sweetness.

 

  1. Optional: For an extra kick of flavor, sprinkle charmoula (the mixture used for marinating) over the cauliflower slices.

 

  1. Serve the roasted cauliflower steaks with the vibrant pomegranate charmoula and creamy tahini sauce on the side. Enjoy your delicious and visually appealing dish!
