OKANAGAN PEACH BELLINI

Our peach tree is finally producing (edible) fruit – yippee! We planted it two years ago, and I have been gushing over how beautiful they are. There is nothing quite like a fresh peach picked and eaten right off the tree.

I’m a sucker for a peach bellini. When I see it on a menu and the sun is shining, I’m probably ordering it! Naturally I knew I needed to make my own because I LOVE taking inspiration from my favourite restaurant dishes and adapting it to be made simply at home. Let’s get right to it shall we?!

What is a Peach Bellini?

The bellini is an Italian-born cocktail, famously made up of peaches and Prosecco. In this version we used Okanagan white wine, peaches and strawberries (for flavour and a cute pink colouring) and a dash of peach schnapps to elevate the peach flavour because…why not?!!

Summer Cocktails

A refreshing summer cocktail can’t be beat, and this Okanagan Peach Bellini is no exception. Some of my other favourites include Granny’s Classic Caesar, this Mixed Citrus Margarita, or if you’re looking for a mocktail, this Lavender Lemonade is so incredible – it even changes colour as you make it!

Okanagan Peach Bellini

Ingredients

  • 2 cups frozen peaches
  • 1 cup frozen strawberries
  • 2 cups white wine
  • 2 ounces peach schnapps
  • handful ice

Instructions

  1. Add all ingredients into a blender and blend until smooth. Add more or less ice until desired consistency is reached. Serve immediately!
