There are limitless ways to serve fish tacos, but I love how in this recipe it is lightly prepared with little effort and not deep-fried.  The obvious reason is that they are so much healthier when prepared this way.  But they also taste better when the ingredients remain fresh and are able to shine!

Easy Apple Cilantro Slaw

I’ve made many variations of coleslaw on tacos, and this has to be the most simple, incredible version I’ve tried. The apples in the slaw lend such a beautiful natural sweetness to the tacos, and I love the Okanagan touch!  The best variety of apples to use here are Ambrosia as they resist browning, but any apple will work. Here’s what goes into it:

  • shredded red cabbage
  • grated apples (Ambrosia is best)
  • orange juice
  • shredded carrot
  • diced jalapeño
  • cilantro

How To Make a Chipotle Crème Fraîche

I always keep a bottle or two of Chipotle Cholula Sauce in my fridge (Tabasco makes a killer one too). It makes the perfect base to an easy chipotle crème fraîche. Simply combine the Greek yogurt with Chipotle Hot Sauce and some fresh lime juice. So easy, and so flavourful. It’s the perfect finishing touch for this taco recipe.

Ingredients

Coleslaw Ingredients:

  • 2 cups finely shredded red cabbage
  • 1 cup grated apples skin on (Ambrosia preferred)
  • 1/3 cup orange juice
  • 1/2 cup shredded carrot
  • 1 tablespoon diced jalapeño (optional)
  • 1/2 teaspoon salt
  • 1/4 cup chopped cilantro

Fish Ingredients:

  • 1 pound white fish i.e.: cod, sole or halibut
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Chipotle Crème Fraîche:

  • 2 teaspoons chipotle hot sauce
  • 1 tablespoon lime juice

Taco Fixings:

  • small flour tortillas
  • jalapeño thinly sliced (optional)
  • wedges of lime
  • pickled red onions (optional garnish)
  • sliced avocado
  • chopped cilantro

Instructions

    1. Combine all of the coleslaw ingredients together in a large bowl, toss together, and set aside.
    2. In a separate large bowl, season the fish with the salt, garlic powder, paprika, chili powder, cumin and set aside.

    3. Make the Chipotle Crème Fraîche by mixing all ingredients in a bowl and set aside. Prepare all of your toppings so that they are ready once the fish has cooked.

  1. Heat a large frying pan on medium heat and cook the fish on each side until the fish is cooked through (be gentle when flipping).  Make sure that the pan isn’t crowded; you may need to do this in two batches depending on the size of your pan. Place the cooked fish on a serving dish covered with foil to keep it warm.

  2. While the fish cooks, heat a separate medium frying pan over medium heat to warm up your tortillas (you can do this in the oven with a damp clean dish towel too by wrapping the toritllas and baking).  Run each tortilla under water (I use our tap) and place on the pan for about 30 seconds a side until the tortilla is warm. This will give you a fresh chewy flour tortilla!

  3. Using a fork, flake the fish gently. Serve the tacos family style with the fish, coleslaw, Chipotle Crème Fraîche and all the fixings.
