Baked Apple Cinnamon French Toast

Is there anything more comforting than the aromas of baked cinnamon and apples throughout your home?! This Baked Apple Cinnamon French Toast is such a fun way to get your day started. Each bite feels like a total celebration. Because every single day is worth celebrating my friends.

 

This is a fabulous recipe for those slow mornings where you want to treat yourself to more than just a piece of toast.

What to Look for in a Bread

Not all breads are created equal! Stonemill Bread is a staple in our home: it is made with non-GMO ingredients, no artificial flavours and no artificial preservatives. It also has the benefit of whole grains and seeds such as flax, oats, sunflower seeds and millet, adding flavour and nutrition. I love the slightly chewy texture thanks to the slow fermentation: taste is important (life’s too short to eat food that doesn’t taste great). For me this bread is a no-brainer choice when in the bread aisle. Recipes are only as good as the quality of ingredients used, after all.  

Best Bread for French Toast

This Baked Apple Cinnamon French Toast has an incredible wholesome texture thanks to using Stonemill Authentic Sourdough Rye Multigrain bread. It makes this dish healthier and more wholesome than a typical french toast recipe that tends to use refined white bread.  The hearty texture of this bread also allows you to skip the step of waiting until the bread dries out that you often see in french toast recipes. 

What Type of Apples are Best for Baking?

Apples that soften without losing their shape are best for baking. Granny Smith, Ambrosia or Gala apples (or a mix!) are a safe bet to use here. Note, a Granny Smith apple will be slightly more tart and less sweet

The bread you choose REALLY matters here! Multigrain breads that are made with whole grains are a source of fibre, protein and iron.  Carbohydrates are the brain’s preferred fuel source, and adding a quality, complex source of carbs to your morning helps set you up for success.

Baked Apple Cinnamon French Toast

This Baked Apple Cinnamon French Toast is the perfect start to a fall day. Enjoy pops of sweetness from apples and raisins, paired with comforting cinnamon and vanilla flavours. Top with maple syrup and a dollop of yogurt for the ultimate morning treat. Any type of milk will work here.

Ingredients

  • 5 cups 1” cubed Stonemill Authentic Sourdough Rye Multigrain about ½ loaf
  • 2 cups diced peeled and cored apples
  • ¼ cup raisins
  • 2 cups milk
  • ½ tablespoon vanilla
  • ½ teaspoon cinnamon
  • 1/8 teaspoon nutmeg optional
  • 1/4 cup maple syrup plus extra for serving
  • 3 eggs well beaten
  • 1/8 teaspoon salt
  • 2 tablespoons melted butter
  • Greek yogurt to serve (optional)

Instructions

  1. Preheat the oven to 350 F and grease a 9″x9″ or similar size baking dish.
  2. In a large bowl, toss together the bread, apples and raisins.
  3. In a medium bowl, whisk together the remaining ingredients (except the yogurt) until well combined.  Pour the liquid ingredients over the bread mixture, stir gently to combine, and transfer into the prepared baking dish.  Bake for 50-60 minutes, until golden brown.
  4. Serve with a drizzle of maple syrup and a dollop of Greek yogurt if desired!
